refactor(with-lingui): move theme and session, merge mock utils

- Theme hooks: tokenBuilders + useAppTheme under hooks; drop theme barrel
- Session fetch helper under utils; update entry/login imports
- Mock filter + avatar helpers in mocks/utils; avatars from API in UI
- README tree updates
